Simple Roasted Vegetables-Vegan and Plant-Based

While struggling with so many “diets” and fad diets around, finding something that works for the long haul is difficult so when I find something good and healthy it seems pretty reasonable to go for it and that’s what I’ve done with this simple recipe of roasted vegetables. I realize it’s only one dish yet purposefully looking for something that can be added to what we already eat it seems very reasonable to include it.

Years ago, in my early 20’s it was discovered that I had a trace of sugar in a blood test. At that time diabetes was pretty much a given in our family. Because I was already in the hospital for something unrelated I was put on a 1200 calorie diet. After a few weeks my blood was tested again and no trace of sugar was found so at that time I was told to watch my diet closely and I should never have a problem with diabetes.

Now to be honest I did not follow to the letter the instructions I was then given, however, with running and jogging as a main activity and hobby and by watching what I ate in moderation, over the years the weight has stayed off and I believe has kept me free of diabetes. I also walk regularly now. Thankfully, I take no medication for anything and am happy to find a simple recipe to keep me on course.

I have also been looking at the vegan and/or plant based diet, so am leaning towards healthier choices in all the foods we eat. More on this another time.

Getting to where we are now, that is, getting rid of the harsh toxic chemicals out of our home is something we’ve been working on now for 18 months. We started in the kitchen under the counters, laundry room and bathrooms and got rid of everything that made the “dirty dozen list” of toxic, endocrine disrupting chemicals. So after making better choices in those areas it certainly seemed reasonable to focus on what else we were putting in our bodies. Sound reasonable?

Now I know for sure that good health does not really matter to a lot of people until it’s too late and some have physical problems that make it difficult to eat properly and there are some who have not been educated as to what processed food does to the body besides being addictive.   However should you happen to be here you’ll find some very interesting thoughts to ponder about ones health.

From what I’ve read nearly 90% of all cancers are preventable, it’s documented, and there are a number of other serious illnesses that can be prevented by simply watching what you eat! Hippocrates, the Father of medicine, simply said, “let food be thy medicine and medicine thy food.” Now you do honestly have to define food and processed does not count.

So here’s the recipe for roasted vegetables. I used sweet potato, russet potato, onion, garlic, green and red bell peppers.

I set the oven at 425 degrees and then I worked on the vegetables.

Chopped up the potatoes, onion and garlic and placed them on a half sheet pan first putting down parchment paper then placed veggies on the paper adding olive oil, sea salt and pepper, then stirred the veggies coating with olive oil. Once oven reached 425 degrees I put them in the oven and set timer for 18 minutes. When the timer went off I removed them from oven then added the peppers adding more olive oil stirring again to coat, then put them back in the oven for another 15 minutes. That’s it, really simple!  They went well with a spinach salad.
