PANCAKES WITH ESSENTIAL OILS
I love experimenting with recipes and trying different things. This morning after walking we had some discussion on what to have for breakfast. A few weeks ago I put a few cups of old fashioned rolled oats into our Vitamix Blender adding 1 cup at a time then made oatmeal flour and kept it refrigerated.
But when I used the recipe for pancakes this time I added 1 drop of YL lemon vitality essential oil to the recipe. They were very good plus we added bacon and steam basted eggs! For the bacon we set the oven at 400 degrees, put parchment paper on a sheet cake pan, added the bacon one slice at a time, side by side, then baked for 15-18 minutes once the oven reached 400 degrees, depending on desired crispness. The pics show the leftover pancakes and bacon, we ate the rest!
Here’s the recipe I came up with for the pancakes:
1 ¾ cup of oatmeal flour
1 T of baking powder (Check out our DIY Baking Powder)
A couple pinches of Himalayan Salt
1 cup of almond milk
1 ½ T organic coconut oil
2 eggs or 2 T ground flax seeds and 6 T water
½ t vanilla
1 drop lemon essential oil
Blend the dry ingredients then add the remaining ingredients, stir well. Add approx ¼ cup of pancake mix to an oiled and medium heated skillet. Watch for bubbles to appear before flipping, 2-3 minutes per side. Enjoy!
